Born in 1971 in Montreal to Portuguese immigrants, Franco attributes his passion for fine cuisine to his mother’s exceptional cooking and his father’s fine palette. Franco’s background has shaped his taste for unpretentious and delicious meals.
After studying economics, Franco followed his instincts to pursue his passion for cooking. His beginnings were successful. In less than two years, after working at a friend’s restaurant, Franco rose from the duties of dishwashing to owning his first restaurant, l’Entre-Miche, which he managed passionately from 2001 to 2006.
The revitalization of the Hochelaga-Maisonneuve district brought forth a new professional clientele to the area. Consequently, the restaurant was lovingly refurbished and christened Parreira. In conjunction with the restaurant’s activities Parreira offers signature-catering services.
So what is the Chef’s specialty you ask?
It’s Simple, Spontaneous, Generous and Delicious. Being the epicurean chef that he is, Franco’s inspirations stem from his travels to Europe, South America, and the Middle East. His flexible nature, listening capacity and devotion are just a few of the qualities that distinguish him from other chefs. One of the key mindsets of Parreira is the notion that the best cuisine is not the one that pleases everyone, but the one that pleases each individual.
